Giuseppe is a member of the Associazione Verace Pizza Napoletana, the association that verifies pizzerias use traditional Neapolitan pizza making techniques.
Being from Naples, he'd hardly do anything else.
I just checked the AVPN listing for Australia, and there are only eight registered pizzerias in Sydney - of which I've been to two. A proper Neapolitan pizza is a thing of wonder.
